Ingredients

  • 1 1/2 cup tapioca flour
  • 3 tablespoons arrowroot flour + additional for dusting
  • 1 1/2 teaspoons maple sugar ((or coconut sugar))
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • 3/4 cup palm shortening (, very cold)
  • 1 large egg (, whisked)
  • 1/4-1/2 cup cold water
  • 2 sheets of parchment paper

  • 1/2 cup maple sugar ((can use coconut sugar, see note))
  • 1/2 cup + 1 tablespoon tapioca flour
  • 1/2 teaspoon salt
  • 2 cups blueberries
  • 1/8 teaspoon lemon zest
  • 1/2 teaspoon lemon juice
  • 4 cups strawberries (, hulled and sliced)
  • 1/2 teaspoon vanilla extract
